Although we just had a polar vortex in May, I am pretending its summer so I made these quick, nutrient-packed, turkey burgers on the grill!
These burgers were really quick to make and are loaded with vitamins and minerals from all the greens in there. You can enjoy them on a whole wheat bun, on a salad, a lettuce wrap or on their own. I topped my burger with tomato, homemade guac, and vegan cheese. And finally, I highly suggest pairing it with crispy, sweet potato fries because they are delicious :)
Okay, let's get to the recipe!
Lean, Green, Turkey Burgs
Prep time: 15 minutes
Cook time: ~10 minutes
Yield: ~10 small patties
Ingredients:
1lb lean, ground turkey
1/2 medium zucchini, grated
1/2 cup spinach, chopped finely
1 egg (can sub for flax egg)
1/4 red onion, diced
4 tbsp oat flour (or any flour you like)
1/2 tsp Worcestershire sauce
1 clove garlic, minced
1 tsp cumin
1 tbsp dried parsley (use fresh if you have it!)
Salt and pepper
Coating: Mix 2 tbsp oat flour + 2 tbsp Nutritional Yeast and spread on the outside of your patties for a crispy outside.
Directions:
1. In a large bowl; combine turkey, zucchini, spinach, onions, egg, Worcestershire sauce, garlic, parsley, and salt and pepper.
2. Add in oat flour and mix with your hands.
3. Make patties and coat with oat flour + nutritional yeast mixture.
4. Grill on bbq or pan-fry until cooked through and crispy on the outside.
5. Top with your favourite burger toppings and enjoy!
